This is a really good, easy, simple recipe to put together. Perfect for a busy weeknight...but with that "yum, it's been cooking all day" flavor!
Ingredients:
3 to 4 cups chicken broth
2 cans petite diced tomatoes
1 can green beans
1 1/2 large chicken breast
2 cloves garlic
1 large onion
1 1/2 tsp. dried basil (can substitute thyme)
1/2 tsp. oregano
salt and pepper to taste
Olive oil for cooking
{1} Chop the onion and garlic. I used a small electric chopper for this because we like our onion cut really small...and the garlic becomes minced.
{2} Cut the chicken into very small, bite size pieces.
{3} Heat the oil in a large pot, then add the onion. Cook until transparent, add the garlic and chicken. Cook until the chicken is no longer pink.
{4} Add the cans of tomatoes, and spices, salt and pepper.
{5} Stir and let cook for 20 minutes.
{6} Add the can of green beans and cook for 10 more minutes.
{7} Serve it up!
I had my helper who came in right at the end and wanted to stir the pot. :)
He also couldn't wait to eat what was in the pot~! :)
